    Grate the jaggery

    Grate the jaggery using a fine grater so it melts quickly and evenly when heated. Breaking it down into smaller pieces prevents it from taking too long to soften in the pan. Set the grated jaggery aside until ready to use.

    Roast the sesame seeds

    Heat a heavy pan on low heat and add the sesame seeds. Roast gently while stirring continuously until they begin to crackle and slightly change color. Add the seeds from the black and green cardamom pods while roasting to release their aroma. Once crackling starts, turn off the heat and transfer to a plate to cool.

    Roast the nuts

    In the same pan, roast the mixed nuts on low heat for a couple of minutes until lightly toasted and fragrant. Stir continuously to prevent burning and to help release their natural oils. Remove from heat and allow them to cool completely before crushing.

    Grind and combine

    Coarsely grind the roasted sesame seeds and toasted nuts separately, ensuring they are crushed but not powdered. Combine both in a large mixing bowl and stir well to distribute evenly. The texture should remain slightly coarse for the perfect laddu consistency.

    Melt and mix

    Add the melted butter to the sesame and nut mixture. Gently warm the grated jaggery in a pan just until it begins to melt, then pour it into the bowl. Mix everything thoroughly while still warm so the jaggery binds the mixture evenly.

    Shape the laddus

    While the mixture is still warm, take small portions in your hands and press firmly to shape into round balls. Roll them to your desired size, ensuring they hold together well. Allow the laddus to cool completely before serving so they set properly.
