Healthy Oven-Baked Puff Pastry Samosas

These oven-baked puff pastry samosas are a healthier alternative to deep-fried samosas. They are crispy on the outside, soft and flavorful on the inside, and perfect for snacks, parties, or tea time. Easy to make and packed with classic Indian spices.

  • 1 kg Potatoes, boiled and diced
  • 250 g Green peas
  • 320 g Ready-rolled puff pastry
  • 2 small Onions, finely chopped
  • 1 piece Ginger, chopped
  • 5 cloves Garlic
  • to taste Green chilies, chopped (optional)
  • 1 handful Fresh coriander, chopped
  • 1 tsp Ajwain (carom seeds)
  • 1 tsp Coriander powder
  • 1 tsp Turmeric powder
  • 1 tsp Garam masala
  • 1 tsp Salt (or to taste)
  • 1 tsp Cumin seeds
  • 1 tsp Fenugreek (kasuri methi)
  • 1/2tsp Hing (asafoetida)
  • 1/2tsp Amchur (dry mango powder)
  • 1 tbsp Oil
  • 1 lemon Fresh lemon juice

    Prepare the Filling Base

    Heat oil in a pan. Add cumin seeds and let them crackle. Add ginger, garlic, and chilies, sauté briefly to remove rawness. Add chopped onions and cook until softened.

    Add Spices and Vegetables

    Add turmeric, coriander powder, garam masala, salt, ajwain, fenugreek, hing, and amchur. Mix well, then add peas and potatoes. Cook for a few minutes until well combined.

    Finish the Filling

    Add fresh lemon juice and chopped coriander. Mix well, turn off the heat, and allow the filling to cool completely.

    Assemble the Samosas

    Roll out puff pastry and cut into portions. Place filling in the center, fold into samosa shape, and seal edges with water.

    Bake the Samosas

    Preheat oven to 190°C. Place samosas on a lined baking tray, lightly spray with oil, and bake for 25 minutes, turning or spraying halfway until golden and crispy.
