For Cooking
- 1 kg Potatoes, boiled and diced
- 250 g Green peas
- 320 g Ready-rolled puff pastry
- 2 small Onions, finely chopped
- 1 piece Ginger, chopped
- 5 cloves Garlic
- to taste Green chilies, chopped (optional)
- 1 handful Fresh coriander, chopped
- 1 tsp Ajwain (carom seeds)
- 1 tsp Coriander powder
- 1 tsp Turmeric powder
- 1 tsp Garam masala
- 1 tsp Salt (or to taste)
- 1 tsp Cumin seeds
- 1 tsp Fenugreek (kasuri methi)
- 1/2tsp Hing (asafoetida)
- 1/2tsp Amchur (dry mango powder)
- 1 tbsp Oil
- 1 lemon Fresh lemon juice

Prepare the Filling Base
Heat oil in a pan. Add cumin seeds and let them crackle. Add ginger, garlic, and chilies, sauté briefly to remove rawness. Add chopped onions and cook until softened.

Add Spices and Vegetables
Add turmeric, coriander powder, garam masala, salt, ajwain, fenugreek, hing, and amchur. Mix well, then add peas and potatoes. Cook for a few minutes until well combined.

Add fresh lemon juice and chopped coriander. Mix well, turn off the heat, and allow the filling to cool completely.

Assemble the Samosas
Roll out puff pastry and cut into portions. Place filling in the center, fold into samosa shape, and seal edges with water.
