Broccoli and Spinach Bhajore (Pakora)

These broccoli and spinach bhajore are a delicious and crispy snack made with gram flour, aromatic spices, and lightly blanched vegetables. Perfectly crunchy on the outside and soft inside, they make a great tea-time snack or starter.

  • 450 g Gram flour (besan)
  • 250 g Broccoli, finely chopped
  • 130 g Spinach, finely chopped
  • 12 g Green chillies, finely chopped (optional)
  • 2 tablespoons Lemon juice
  • 2 tablespoons Yogurt
  • 2 tablespoons Rice flour
  • 2 tablespoons Dried fenugreek leaves (kasuri methi)
  • 1 tablespoon Garam masala
  • 1 tablespoon Garlic powder
  • 1 tablespoon Salt (or to taste)
  • 1 tablespoon Cumin seeds
  • 1 tablespoon Ajwain (carom seeds)
  • 1/2teaspoon Baking powder
  • 1/2teaspoon Turmeric powder
  • 1/2teaspoon Mango powder (amchur)
  • 1/2teaspoon Pomegranate powder (anardana)
  • 3 tablespoons Oil (for batter)
  • Water (as needed)
  • Oil (for deep frying)

    Blanch the broccoli

    Bring a pan of water to a boil. Add broccoli with a pinch of salt and boil for 2 minutes. Drain and allow to cool.

    Finely chop the blanched broccoli, spinach, and green chillies if using.

    Make the batter

    In a large bowl, add gram flour, rice flour, yogurt, lemon juice, all spices, baking powder, and oil. Gradually add water to form a thick but smooth batter.

    Combine vegetables

    Add chopped broccoli, spinach, and chillies into the batter. Mix well so everything is evenly coated.

    Fry the bhajore

    Heat oil in a deep pan. Spoon portions of the batter into hot oil and fry on medium heat until golden and crispy. Remove and drain on kitchen paper.
