  • 2 large Onions finely chopped
  • 1 tablespoon Ginger chopped
  • 1 tablespoon Garlic chopped
  • 2 pieces Green chillies chopped
  • 2 pieces Eggs
  • 1/2cup Gram flour
  • 1/2teaspoon Salt
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Crushed black pepper
  • 2 teaspoons Crushed coriander
  • 1 teaspoon Cumin powder
  • 1 teaspoon Crushed chilli flakes
  • 1 teaspoon Chaat masala
  • 1/2cup Fresh coriander chopped
  • 2 slices Bread
  • 1 teaspoon Oil for mixture
  • 500 milliliters Oil for frying
  • 1 small Onion sliced for garnish
  • 2 pieces Green chillies for garnish
  • 1 tablespoon Fresh lemon juice

    Add the chicken mince into a large mixing bowl along with chopped onions, ginger, garlic, and green chillies. Mix everything thoroughly using your hands until the ingredients are evenly combined. Knead the mixture gently in the same way you would knead dough so the onions and aromatics blend properly into the mince.

    Crack the eggs into the mince mixture and add gram flour gradually while mixing. Add salt, turmeric powder, garam masala, crushed black pepper, crushed coriander, cumin powder, chilli flakes, and chaat masala. Stir well until the spices are evenly distributed and the mixture becomes slightly firm and easy to shape.

    Mix in breadcrumbs and herbs

    Crush the bread slices into fine crumbs using a grinder or food processor and add them into the mince mixture. Add fresh coriander and one teaspoon of oil, then mix everything together thoroughly. Let the mixture rest for a few minutes so the breadcrumbs absorb excess moisture and help bind the kebabs.

    Shape the kebab balls

    Lightly grease your hands with oil and begin shaping the mixture into small round balls. Keep the size even so they cook uniformly during frying. Arrange the prepared kebab balls on a tray or plate while you finish shaping the remaining mixture.
