    Place a heavy-bottomed pan on low heat and add the ghee or butter. Allow it to melt gently without browning. Keep the heat low to prevent burning and ensure the fat heats evenly before adding the gram flour.

    Add the besan to the melted ghee and stir continuously on low heat. Roast gently until the mixture releases a nutty aroma and slightly changes color. Stir constantly to prevent lumps and avoid burning the flour.

    Slowly pour in the milk while stirring continuously to prevent lumps from forming. Keep the heat low at first, then slightly increase once fully combined. Stir well until the mixture becomes smooth and begins to gently thicken.
