These homemade cheese and potato puff pastry pasties are golden, crispy on the outside and soft and cheesy on the inside. Made with boiled potatoes, sautéed onions, cheddar cheese, and mixed herbs, they are baked to perfection and make a delicious snack, lunch, or party treat.

Ingredients
For Cooking
- 380 g Potatoes, peeled and chopped
- 150 g Onions, finely chopped
- 200 g Cheddar cheese, grated
- 2 tablespoons Butter
- 5 g Salt (or to taste)
- 5 g Black pepper
- 1 tablespoon Mixed herbs
- 1 pack Puff pastry (ready-made)
- 1 Egg, beaten (for egg wash)
- Oil or butter, for greasing tray

Boil potatoes
Boil chopped potatoes in salted water for about 10 minutes until tender. Drain and allow to cool slightly.

Cook onions
Heat butter in a pan. Add chopped onions and sauté for 4–5 minutes until soft and lightly golden.

Prepare filling
Add boiled potatoes to the onions. Season with salt, black pepper, and mixed herbs. Mash lightly with a fork and mix well. Allow mixture to cool completely.

Once cooled, add grated cheddar cheese to the potato mixture and mix thoroughly.

Shape pasties
Cut puff pastry into desired sizes. Place filling in the centre, fold, seal edges, and press gently with a fork. Make small slits on top for steam.
