These broccoli and spinach bhajore are a delicious and crispy snack made with gram flour, aromatic spices, and lightly blanched vegetables. Perfectly crunchy on the outside and soft inside, they make a great tea-time snack or starter.

- 450 g Gram flour (besan)
- 250 g Broccoli, finely chopped
- 130 g Spinach, finely chopped
- 12 g Green chillies, finely chopped (optional)
- 2 tablespoons Lemon juice
- 2 tablespoons Yogurt
- 2 tablespoons Rice flour
- 2 tablespoons Dried fenugreek leaves (kasuri methi)
- 1 tablespoon Garam masala
- 1 tablespoon Garlic powder
- 1 tablespoon Salt (or to taste)
- 1 tablespoon Cumin seeds
- 1 tablespoon Ajwain (carom seeds)
- 1/2teaspoon Baking powder
- 1/2teaspoon Turmeric powder
- 1/2teaspoon Mango powder (amchur)
- 1/2teaspoon Pomegranate powder (anardana)
- 3 tablespoons Oil (for batter)
- Water (as needed)
- Oil (for deep frying)

Blanch the broccoli
Bring a pan of water to a boil. Add broccoli with a pinch of salt and boil for 2 minutes. Drain and allow to cool.

Finely chop the blanched broccoli, spinach, and green chillies if using.

In a large bowl, add gram flour, rice flour, yogurt, lemon juice, all spices, baking powder, and oil. Gradually add water to form a thick but smooth batter.
