A healthier version of classic onion bhajis made in the air fryer. These bhajis are crispy on the outside, soft on the inside, and packed with flavor from spices and lemon. Perfect as a snack or starter, served with chutney.

Ingredients
For Cooking
- 200 g Onions, thinly sliced
- 1 handful Fresh coriander, finely chopped
- 75 g Gram flour (besan)
- 45 g Rice flour
- 2 tsp Lemon juice
- 2 tsp Oil
- 1 tsp Cumin seeds
- 1 tsp Turmeric powder
- 1 tsp Fenugreek (kasuri methi)
- 1 tsp Garam masala
- 1 tsp Ajwain (carom seeds)
- 1 tsp Salt (or to taste)
- 6 Green chilies, finely chopped (optional)
- as needed Oil spray (for air frying)

Prepare onions
Thinly slice the onions and separate the layers. Place them in a large mixing bowl.

Add herbs and spices
Add chopped coriander, cumin seeds, turmeric, fenugreek, garam masala, ajwain, salt, and chopped chilies (if using).

Add lemon and oil
Add lemon juice and oil. Mix well, crushing the onions slightly so they release their natural moisture.

Rest the mixture
Leave the mixture to rest so the onions release water. Do not add water unless absolutely needed.

Add flours
Add gram flour and rice flour. Mix well to form a thick, sticky mixture that coats the onions.

Preheat air fryer
Preheat the air fryer at 200°C.

Air fry bhajis
Place spoonfuls of the mixture into the air fryer basket. Cook at 200°C for 15 minutes, turning halfway and lightly spraying with oil.
