- 80 g Water
- 80 g Golden syrup
- 12 g Bicarbonate of soda

Prepare tray
Line a tray with non-stick baking paper and lightly grease with oil. Set aside.

Dissolve sugar
Place a deep pan on very low heat. Add sugar, water, and golden syrup. Stir gently until the sugar dissolves.

Cook syrup
Allow the mixture to cook gently until the water evaporates, the syrup starts bubbling, and the color turns light golden. Do not burn.

Add bicarbonate of soda
Turn off the heat. Quickly add the bicarbonate of soda and stir rapidly. The mixture will foam up immediately.

Set the honeycomb
Immediately pour the foamy mixture into the prepared tray. Do not spread or press it down.

Allow the honeycomb to cool completely. Once set, break into pieces and serve.
