  • 60 grams Gram flour (besan)
  • 60 grams Rice flour
  • 1 Onion, finely chopped
  • 2 Spring onions, chopped
  • 6 Green chilies, finely chopped
  • Fresh coriander, chopped
  • 0.5 Lemon, juiced
  • 4 tablespoons Oil
  • 5 grams Salt
  • 5 grams Garlic powder
  • 5 grams Mango powder (amchur)
  • 5 grams Turmeric powder
  • 5 grams Garam masala
  • 5 grams Kashmiri chili powder
  • 2.5 grams Hing (asafoetida)
  • Black pepper, a pinch

    Soak the cauliflower

    Place the cauliflower florets in boiling water with a pinch of salt and soak for three minutes. Drain well and set aside to remove excess moisture.

    Prepare the marinade

    Add chopped onion, spring onions, green chilies, fresh coriander, lemon juice, oil, salt, garlic powder, mango powder, turmeric powder, garam masala, Kashmiri chili powder, and hing to the cauliflower. Mix thoroughly until the florets are well coated.

    Marinate the cauliflower

    Cover the marinated cauliflower and rest it for at least one hour. This allows the onions to release moisture and the flavors to fully absorb.

    Add flours and coat

    Add gram flour and rice flour to the marinated cauliflower along with a pinch of black pepper. Mix gently until each floret is evenly coated. No additional water is needed.

    Air fry the pakoras

    Preheat the air fryer to 200°C. Line the basket with greaseproof paper and lightly oil it. Arrange the cauliflower in a single layer, spray with oil, and air fry for 10 minutes. Turn halfway, spray lightly again, and cook for another 8 minutes until golden and crispy.
