    Reduce the Milk

    Add a small splash of water to a heavy-bottomed pan to prevent sticking, then pour in the full fat milk and bring it to a gentle boil over medium heat. Reduce the flame to low and simmer, stirring continuously and scraping the sides so the thickened milk mixes back in. Continue cooking patiently until the milk reduces significantly and turns into a thick, grainy khoya consistency.

    Sweeten and Flavor the Khoya

    Once the milk has thickened into a soft dough-like texture, add the sugar and cardamom powder while stirring continuously. The mixture will loosen slightly as the sugar melts, which is completely normal. Keep cooking and stirring until it thickens again and begins to leave the sides of the pan, releasing a rich, fragrant aroma.

    Cool and Shape the Pedas

    Turn off the heat and allow the mixture to cool until warm but comfortable to handle. Lightly grease your palms with ghee, take small portions of the mixture, and roll them into smooth balls. Gently flatten each ball between your palms to form soft, round pedas with a traditional shape.
